Creamy Avocado Alfredo

Hey friends!

I had some requests for this recipe and I'm so excited to share it! It is definitely going to be a staple now in our house! I have not always loved to cook. If you asked me 5 years ago I would have said I really disliked it and would much prefer baking, but something changed just over a year ago and now I'm loving it! The idea of making healthy meals for my family and trying new recipes is exciting, although sometimes overwhelming when both kids want to help haha! Anyone else experience the "witching hour" right when you are making supper and the kids are going a little nuts?!

I've been on an avocado kick lately and have it in salads, on toast, in pudding, and yesterday tried it as a pasta sauce and it was delicious!! I looked up a couple recipes, and tweaked them and it turned out way better than expected! I used to be so timid when trying new things, but now it's fun to add new flavours and ingredients! It was creamy, tasted like alfredo, and my husband and kiddos loved it! It was also super easy to use, with minimal ingredients, and healthy fats! I added some parmesan cheese because I wanted to hide a bit of the avocado flavour from my kids since they are not huge avocado fans.

Creamy Avocado Alfredo

Ingredients:

2 avocados

1/3 cup coconut milk (or whatever milk you have!)

1 tsp lemon juice

1/4 cup parmesan cheese (you can omit or use dairy free cheese if making it dairy free)

Salt

Pepper

Directions:

Blend in food processor or blender until smooth. Add to pasta, zoodles or on chicken! We added it to the zucchini/butternut squash noodles from Costco and they were amazing! I cooked the noodles in garlic and olive oil, but you can also just add the garlic into the sauce and blend it right in there as well.

This made a big batch of alfredo sauce which would feed 6 people easily!
