Healthy Banana Apple Muffins

Hey friends!
This past week has been absolutely beautiful and I love this time of year! The leaves changing colour and starting to fall (a little too quickly for my liking ;) ) and the air is crisp in the mornings. I dug my slippers out for the cool mornings and have started to slowly put away all the summer clothes (shedding a few tears at the thought of summer being over so soon though!).
This past week, or really all of September, has been pretty chaotic with getting in to a new schedule and a bunch of things that have been going on. If I'm feeling overwhelmed, baking honestly grounds me and gives me life! Especially if there's a great playlist on in the background! This past week I experimented with a muffin recipe and they turned out soooo good! Riley is my major encourager when it comes to cooking and baking, and he is quite a critic so if he raves about something, you know its good! As soon as he got home from school he devoured 2 muffins and asked for more (thankfully I popped some in the freezer so we would have some to get us through at least 2 days haha!)
The secret ingredient in this recipe is my friend's homemade applesauce! It is absolutely delicious and I have to make apple sauce asap in order to make more of these muffins! The applesauce keeps them moist (I know I know, that word isn't my fave either but it's true haha!). The muffins are gluten free (we love the 1:1 ration gluten free flour from Bulk Barn), and can be dairy free if you have dairy free chocolate chips or sub them for raisins or nuts!

Healthy Banana Apple Muffins (makes approx. 18 muffins)
What you'll need:
3 large ripe bananas
1/3 cup maple syrup or honey
1 egg
1 cup applesauce
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup melted coconut oil
1 cup gluten free oats (or quick oats)
2 tbsp collagen powder
2-3 tbsp ground flax seed
1 1/2 cups gluten free flour
1 tsp cinnamon
1/2 cup chocolate chips or raisins or nuts
To Make:
Heat oven to 350F. Mash bananas and add maple syrup or honey. Add egg and melted coconut oil. Add dry ingredients and chocolate chips (or raisins or nuts). Mix well. Spoon into muffin cups. Bake for 14 minutes (or longer if needed).
