Gluten Free Saskatoon Oat Pancakes

My kids loooove pancakes! They make for a simple, easy breakfast and I like to double the batch to have leftovers for the next day. These pancakes are incredibly easy as you throw all of the ingredients into a blender, and then pour out onto a pre-heated pan! The kids enjoy helping pop all of the ingredients in and practice their egg-cracking skills. These pancakes are gluten free and dairy free and you can substitute any kind of berry for the saskatoons!

Ingredients:

1/2 cup almond milk or coconut milk

1 ripe banana

2 eggs and 1 egg white

1/2 tsp vanilla

2 tsp baking powder

dash of salt

1 1/2 cups rolled oats

1/2 cup saskatoons

2 tbsp. maple syrup

Blend it all together and pour onto pan. Enjoy!
