Peanut Butter Energy Bites

I always think that September is like the "beginning" of the year. It just feels like new schedules, new school year and new routines to get into! Riley is now in grade 1 and it feels like I barely see him as he is at school everyday now! When he comes home the first thing he goes to is the fridge! (and gives me a hug, but it's usually on the way to the fridge haha!) Since he can't have anything containing nuts at school, he has been requesting these peanut butter energy bites for an after school snack! (you can totally make them with a non-nut butter as well!) These make the perfect snack, easy for on-the go in the car, quick breakfast or before/after a workout!

We've been making a big batch and freezing them and we can usually get a couple weeks out of them before they are gone.


I adapted the recipe from www.gimmesomeoven.com as it is the perfect recipe! I added a few substitutions and additional options such as collagen powder and ground flax which I'll put below!


Peanut Butter Energy Bites

1 cup oats (we use gluten free)

1/2 cup honey or maple syrup

2/3 cup unsweetened shredded coconut (we sometimes omit this)

1/2 cup peanut butter (or any other nut butter)

1 tbsp ground flax (optional)

1 tbsp chia seeds (optional)

1-2 tbsp collagen powder (we like the Organika Enhanced Collagen powder)

1 tsp vanilla

1/2 cup chocolate chips


Directions

Mix ingredients together and chill for a half hour in the fridge. Then roll into balls and enjoy! They are super yummy when frozen.
