Healthy Banana Chocolate Chip Muffins

Hey friends!

I've been baking again and preparing more food for when the baby comes and thought I'd share these delicious banana chocolate chip muffins! Who doesn't love a good banana chocolate chip muffin? We have been trying to make things sugar-free/refined sugar-free as well as incorporate healthy fats into our diet. For this recipe I used maple syrup (you can use honey too) and they turned out great! These make an easy snack and breakfast, and you don't have to feel guilty eating more than one! I added some chocolate chips because they just wouldn’t be the same now would they! Haha! You can easily make these dairy-free by substituting dairy-free chocolate chips or omitting them! They also freeze really well, which is a good way to hide them from your kids so they don't eat them all at once!



Healthy Banana Chocolate Chip Muffins

Ingredients:

3 Large very ripe bananas

1/3 cup maple syrup

1 egg

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1/3 cup chocolate chips

1 1/2 cup gluten free flour (I like the 1:1 ratio blend at Bulk Barn)

1/3 cup melted coconut oil

Directions:

1. Pre-heat oven to 350F and line muffin tins or use coconut oil to grease them

2.Mash bananas and add in maple syrup

3. Add egg and melted coconut oil

4. Add dry ingredients and mix on low until all combined

5. Spoon into muffin cups

If using mini muffin tins, I found baking them for 9 minutes was perfect. If using regular muffin tins bake for 12-15 minutes.
