Blueberry Spinach Smoothie & Meal Planning!

Hey friends!

Happy Tuesday! I’m just in the midst of putting together a few freezer meals for when the baby arrives. Let me tell you, the nesting is happening hardcore! My to-do list is slowly being checked off. I think my husband thinks I’m going a bit crazy haha! In all honesty though there isn’t a lot we “need” to do before baby comes, just things that I’d like to do that may make life a bit easier and manageable with 3 kids! (It will take me awhile to get used to saying that once baby is here!!)

One of the things that has been so helpful in staying organized is meal planning! I’ve never been one to meal plan for a whole week. I usually have planned 2 meals and the rest are “fly by the seat of my pants” kinda meals. This past month I’ve been sitting down with recipe books and getting some ideas, bookmarking pages and looking online for meal ideas! It has been SO much fun! Since my husband is doing keto right now, and we are trying to eliminate sugar as much as possible, it’s been a fun challenge to change up recipes! I will be sharing some that we have been loving here on the blog. (You can subscribe below to receive some recipes straight to your inbox as well!) I will just put a disclaimer that I am by no means a professional and didn’t go to culinary school or anything (haha!), but I love health and nutrition! (Probably from my dental hygiene studies as well and seeing how what you eat affects your whole wellness!) Also, watching food shows and documentaries - anyone else get addicted to these?!

Meal Planning tip:

On Sundays I will write out a list of meals to make for each day, along with a grocery list of anything we will be needing for the week.

We boil eggs and make salads at the beginning of the week so that they are ready to grab! We also chop veggies and store them in containers so that they are easy to add to a lunch or snack on during the day. If you have any other tips to give let me know as I'm a newbie at this!

Spinach Blueberry Smoothie

I absolutely love smoothies! This is one I’ve been making on repeat! If my kids are going to have one as well then I double the recipe. Anyone else try to hide their smoothie from their kids so they don't devour it?! The blueberries are high in antioxidants and the combination with spinach provide potassium (one of the highest sources!), iron, and many vitamins and minerals.

2 cups spinach

1/2 cup almond/coconut blend (or whatever non-dairy milk you have!)

1/2 cup water

1/3 cup frozen blueberries

1-2 tbsp ground flax


Blend and enjoy!
