Friday Pizza Nights

Every Friday we have made it a family tradition to have pizza night! It's fun making them with the kids and trying different topping combinations. I thought I'd share two of our favourite kinds of pizza to make as well as the fail-proof pizza dough recipe we use!
The pizza dough is super simple and you only need to let it rise for an hour before you make the pizza. It's Martha Stewart's Basic Pizza Dough recipe and it can make about 2-3 large pizzas. The dough also freezes really well!
(For my son we buy a gluten free ready made pizza crust and then just add the toppings!)

Prosciutto Artichoke Pizza (my personal fave!)
Ingredients:
Fig Jam
6-8 slices of prosciutto
Artichokes
1 medium pear thinly sliced
Mozzarella cheese
Directions:
1. Spread fig jam onto the pizza dough.
2. Lay prosciutto slices over the fig jam.
3. Add pear and artichokes.
4. Top with mozzarella cheese
5. Bake at 400F for 20-25 minutes.


BBQ Chicken Pizza
Ingredients:
1-2 chicken breasts cooked
BBQ sauce (We love the Maple Bacon Cattle Boyz - has a good spicy kick to it!)
Pineapple pieces (1/2 can)
1/2 Red Pepper
Mozzarella Cheese
Directions:
1. Spread BBQ sauce onto the pizza dough.
2. Dice chicken and put it over the sauce.
3. Add pineapple pieces.
4. Chop the red pepper and add it to the pizza.
5. Top with mozzarella cheese.
6. Bake at 400F for 20-25 minutes.
